🥞 High Protein GF Cottage Cheese Pancakes 🥞

Cottage cheese is still having its moment in my heart ❤️ Make these when you’re looking for an easy, high protein breakfast or want to try something new 🤌🏼

Ingredients:
* 1 cup whole-milk cottage cheese
* 2 large eggs
* 2 tbsp maple syrup
* 2 tsp avocado oil or melted butter
* 1 tsp vanilla
* 1 cup gluten free flour mix (sub with regular flour)
* 1/2 tsp baking powder
* pinch of salt

Topping Options:
* Maple syrup
* Berries
* Chocolate chips
* Yogurt

Recipe:
1. Add cottage cheese, eggs, maple syrup, avocado oil, and vanilla to a large bowl and mix well.
2. Add in the flour, baking powder, and pinch of salt. Mix well.
3. Use a 1/4 cup measuring cup to pour the batter on a lightly oiled pan over medium heat. Lightly spread the batter out on the pan to make a pancake shape.
4. Cool until the bottom is golden brown on both sides (about 2 mins per side)
5. Top with your favorite toppings and enjoy :)

Notes:
- I used @good_culture lactose free cottage cheese.
- I used @bobsredmill 1:1 GF Flour Mix
- I used my fave @caraway_home frying pan

Spring is all about making fun dips and we’re starting this season off with CILANTRO JALAPEÑO HUMMUS 🌱

If you ARE a fan of hummus, you’ll love this spicy green version, and if you’re NOT a fan of hummus, wyd?

Ingredients:
1 15oz can chickpeas, drained
2 jalapeños
3-4 cloves garlic, peeled
1/2 ripe avocado (optional)
1/4 cup tahini
1 medium lemon, juiced
3 tsp cumin
salt n peppa
4-6 tbsp olive oil
2 ice cubes
1 handful fresh cilantro

Toppings:
raw pumpkin seeds
olive oil
za’tar or sumac for color
fresh cilantro

Recipe:
1. Preheat oven to 425F.
2. Place jalapeños on a baking sheet, drizzle with oil, and roast for 15-18 minutes, flipping halfway.
3. Then, place jalapeños in a bowl and cover to steam for 3-5 minutes.
4. Once steamed and cooled down a bit, peel away the jalapeño skin and remove seeds. (Leave in some seeds for more spice) Wash your hands well afterwards!
5. Put the peeled jalapeños and all of the other ingredients in a food processor and combine until a hummus-like consistency forms.
6. Add more olive oil if needed, and adjust seasonings to taste.
7. Serve with veggies and crackers or use on sandwiches!! Top with pumpkin seeds, olive oil, spices, and fresh herbs 🌱

These Stuffed Eggplant Bowls are a great option if you want to spice up your dinner lineup this week! 🍆

Stuffed Eggplant Boats:
Olive oil, for cooking
4 medium eggplants, halved
1 cup jasmine, cooked according to package instructions 1/2 yellow onion, finely diced
4 cloves garlic, minced
20oz (570 grams) ground beef
1/2 cup cherry tomatoes, halved

Spices & Garnish:
2 tsp garlic powder
2 tsp cumin
1/2 tsp red chili flakes (optional)
1 tsp coriander
Salt and pepper, to taste
Fresh parsley, finely chopped for garnish

Yogurt Sauce:
10.50z (300 grams) greek yogurt
4 cloves garlic, minced
2 Persian cucumbers, grated and drained
1/2 large lemon, juiced
1/4 cup water
2 tbsp fresh parsley, finely chopped

Recipe:
1. Preheat the oven to 375°F (190°C).

2. Place eggplant halves on a lined sheet pan, skin side down. Brush the inside of each eggplant with olive oil, season with a pinch of salt, and bake for 30-40 minutes or until golden brown and fork tender.

3. While the eggplant cooks, combine all of the yogurt sauce ingredients and set aside.

4. Heat olive oil in a large pan over medium heat.
5. Add onions and garlic and sauté for 2 minutes or until onion becomes translucent.

6. Add beef to the same pan, cook until browned, and crumble using a wooden spoon or
spatula.

7. Add cherry tomatoes, rice, and all of the spices. Mix until combined.

8. Once cooked, press down the insides of each eggplant half with a fork to create space
for the filling.

9. Time to plate! Add a hefty scoop of yogurt sauce to each plate and spread it into a circle.
Place an eggplant on each plate and fill with the rice and beef mixture.

10. Add more yogurt sauce on top if desired, and garnish with fresh parsley.
