Crispy chicken is one of the many things I’ve missed since becoming gluten free. It’s nostalgic, crunchy, flavorful, and everything else that’s good in the world
But fear not, for I have managed to create crispy chicken tenders for those that cannot stomach gluten!!! And if you happen to be one of the lucky ones who CAN stomach gluten, feel free to sub the gluten free breadcrumbs out for regular ones.
Crispy Gluten Free Air-Fried Chicken Tenders
Equipment
- Cutting Board
- Meat mallet optional
- 2 Bowls
- Air Fryer
Ingredients
- 1 lb Chicken thighs or breasts
- 1-2 cups Gluten free breadcrumbs
- 2-3 tsp Smoked paprika
- 2-3 tsp Garlic powder
- 2-3 tsp Dried oregano
- Red chili flakes optional
- Salt and pepper
- 2 Eggs
- Neutral oil for frying
- Ketchup and mustard for dipping
Instructions
- Wash and dry your chicken.
- Place chicken pieces between two pieces of waxed paper, plastic wrap, or into a plastic bag. Pound it lightly with a meat mallet until the chicken becomes even in thickness. (This step is recommended but not necessary).
- Cut chicken into strips or bite sized pieces. If you have pre-sliced chicken, skip this step.
- Crack 2 eggs in a bowl and whisk them together.
- Mix breadcrumbs and seasonings together in a second bowl.
- Start coating your chicken pieces by fully submerging each one in the egg mixture. Then roll each piece in the breadcrumbs until fully coated, and take it for one more dip in the egg mixture.
- Place the triple coated piece of chicken in the air fryer basket in a single layer. Repeat this process for every piece of chicken using tongs, a fork, or your hands.
- Once all the pieces are fully coated and placed in the air fryer basket, generously drizzle them with olive oil.
- Cook at 390F for 10-12 mins, flipping each piece halfway through.
- Serve with your favorite dipping sauces and garnish with dill!
