Maple Tahini Glazed & Roasted Carrots

- 1 Baking sheet
- Foil or silicone baking liner
- 1-2 Mixing bowls
- Whisk
- Vegetable peeler
- Lemon juicer optional
Ingredients
Roasted Carrot Ingredients
- 6-10 large Carrots peeled, cut into sticks
- Olive oil
- 2 tsp Garlic powder
- 2 tsp Za'atar
- 1 tsp Cumin
- 1/2 tsp Red chili flakes optional
- Salt & pepper
Maple Tahini Glaze
- 1/3 cup Tahini
- 1 Lemon juiced
- 3 tbsp Maple syrup
- 3-5 tbsp Hot water to dilute glaze
- 1/2 tsp Za'atar
Toppings
- Fresh mint optional
- Pine nuts optional
Instructions
- Preheat oven to 375°F.
- Wash, peel, and slice carrots into 2-bite sized sticks.
- Add carrot sticks to a large bowl, and drizzle generously with olive oil.
- Season with garlic powder, za'atar, cumin, red chili flakes, salt and pepper. Taste and adjust seasonings as needed.
- Line a baking sheet with foil and place carrots onto it in a single layer.
- Roast at 375°F for 20-25 mins. flipping halfway.
- While the carrots are roasting, combine the Maple Tahini Glaze ingredients and whisk together until fully combined. Taste and adjust ingredients as needed. The consistency should be fairly thick but drizzly.
- When the carrots are finished roasting, wait a few minutes for them to cool.
- Plate and top with the maple tahini glaze, fresh mint, and pine nuts.
