Loaded Massaged Kale Salad

Ingredients

Salad Ingredients

  • 8-10 cups Chopped or shredded kale
  • 3 cups Cherry tomatoes
  • 1 Red or orange bell pepper
  • 1/2 Red onion
  • 2 cups Shredded carrots
  • 1/2 cup Hemp seeds
  • 1 cup Dried cranberries
  • 1 cup Chopped walnuts
  • 1 cup Crumbled feta cheese (optional)
  • 1 cup Fresh chopped parsley (optional)

Dressing Ingredients

  • 1/3 cup Olive oil
  • 1/2 cup Red wine vinegar
  • 1 Large lemon
  • 3 cloves Minced garlic
  • Salt
  • Black pepper

Instructions

  • Put your chopped kale in a bowl and drizzle with olive oil and juice from a lemon. Massage the oil and juice in for about 1-2 mins or until it looks like it has completely seeped into the kale.
  • Chop the cherry tomatoes into halves or quarters, dice the bell pepper and purple onion, and add everything into the bowl.
  • Sprinkle in the cranberries, walnuts, hemp seeds, shredded carrots, feta cheese, fresh parsley. Mix well.
  • Whisk together the dressing ingredients well and drizzle over the salad. Mix well and enjoy!

Notes

This salad can be made vegan by omitting the feta cheese.
