Put your chopped kale in a bowl and drizzle with olive oil and juice from a lemon. Massage the oil and juice in for about 1-2 mins or until it looks like it has completely seeped into the kale.
Chop the cherry tomatoes into halves or quarters, dice the bell pepper and purple onion, and add everything into the bowl.
Sprinkle in the cranberries, walnuts, hemp seeds, shredded carrots, feta cheese, fresh parsley. Mix well.
Whisk together the dressing ingredients well and drizzle over the salad. Mix well and enjoy!
Notes
This salad can be made vegan by omitting the feta cheese.
