Miso Butter Green Beans w/ Crispy Garlic

Ingredients

Green Bean Ingredients

  • 1 lb Fresh green beans cleaned, ends cut off
  • Olive oil
  • 2 tsp Garlic powder
  • Salt/pepper to taste

Miso Butter Sauce

  • 1/4 cup Vegan butter melted, sub regular butter
  • 1 heaping tbsp Red miso paste
  • 1.5 tbsp Maple syrup
  • 2-4 tbsp Hot water to dilute
  • 1 pinch Cracked black pepper

Toppings:

  • 4-5 cloves Fresh garlic thinly sliced
  • Fresh cilantro or parsley finely chopped
  • Red chili flakes optional

Instructions

  • Wash and clean green beans. Slice the ends off and dry them well.
  • Heat a hefty drizzle of olive oil in a non-stick pan or wok and add green beans.
  • Fry over medium heat for 7-10 minutes, mixing often until the green beans develop a crispy, golden skin.
  • To make the sauce, combine all of the ingredients and add hot water little by little until consistency becomes fairly thick, but still runny enough to drizzle.
  • Slice garlic into thin pieces.
  • Heat olive oil in a non-stick pan and add garlic slices. Fry over medium-high heat for 2-4 minutes or until garlic becomes crispy. Mix frequently to avoid burning.
  • Plate green beans in a large plate or bowl, drizzle with the Miso Butter Sauce, top with crispy garlic and chopped fresh herbs. Sprinkle with red chili flakes for an added kick.
