Sumac Roasted Sweet Potatoes with Crunchy Peanut Sauce

  • Foil or silicone liner to line baking sheet

  • Chef's knife

Ingredients

Sweet Potato Ingredients

  • 5-6 large Sweet potatoes washed, diced
  • Olive oil
  • 2 tsp Sumac
  • 2 tsp Cumin
  • 1.5 tsp Garlic powder
  • Salt and pepper

Sauce Ingredients

  • 1/4 cup Crunchy peanut butter
  • 3 tsp Maple syrup
  • 2-3 tsp Soy sauce
  • 2-3 tsp Sriracha
  • 1/2 tsp Chili flakes optional
  • 3 tbsp Hot water to dilute
  • Salt and pepper to taste

Toppings

  • Fresh herbs chopped
  • Pine nuts sub chopped peanuts

Instructions

  • Preheat your oven to 425F°.
  • Wash and dice sweet potatoes into bite-sized pieces.
  • Add the diced potatoes into a bowl, give them a generous olive oil drizzle, and combine with all of the listed seasonings. Mix until each potato piece is coated in spices.
  • Line a baking sheet with foil, and spread the potatoes out in one even layer.
  • Bake at 425F° for 35-40 minutes, mixing halfway.
  • When they're ready, broil for 1-2 minutes to ensure a satisfying crisp! Keep an eye on them to make sure they don't burn.
  • While the potatoes are roasting, make your sauce by whisking together all of the sauce ingredients. Taste and adjust seasonings as needed.
  • Plate the potatoes in your favorite bowl and drizzle them with the peanut sauce.
  • Top with pine nuts and fresh herbs for pizazz!
