Preheat your oven to 425F°.
Wash and dice sweet potatoes into bite-sized pieces.
Add the diced potatoes into a bowl, give them a generous olive oil drizzle, and combine with all of the listed seasonings. Mix until each potato piece is coated in spices.
Line a baking sheet with foil, and spread the potatoes out in one even layer.
Bake at 425F° for 35-40 minutes, mixing halfway.
When they're ready, broil for 1-2 minutes to ensure a satisfying crisp! Keep an eye on them to make sure they don't burn.
While the potatoes are roasting, make your sauce by whisking together all of the sauce ingredients. Taste and adjust seasonings as needed.
Plate the potatoes in your favorite bowl and drizzle them with the peanut sauce.
Top with pine nuts and fresh herbs for pizazz!
