Vegan & GF Birthday Cake Energy Balls

Naturally gluten free and dairy free energy balls that are sure to please anyone with a sweet tooth!

Equipment

  • Food Processor

Ingredients

  • 8-10 Medjool dates
  • 1/2 cup Peanut butter
  • 1 cup Oatmeal or oat flour
  • 2 tsp Vanilla extract
  • 1/4 tsp Sea salt
  • 1/2 cup Almond milk or other milk of choice
  • 1 cup Walnuts can sub almonds
  • Birthday cake sprinkles

Instructions

  • Place dates in a bowl and submerge in hot water. Soak for 3-5 minutes.
  • Put all of the ingredients except for the sprinkles into a food processor and mix until everything is combined into a doughy consistency.
  • Turn the food processor off and take out the blade to fold in the sprinkles. Measure with your heart!
  • Roll the dough into about 10-12 balls and top with more sprinkles.
  • Refrigerate for 15-20 mins and enjoy!

Notes

These can be stored in the fridge for 5 days or in the freezer for about 2 weeks! The batter can also be eaten right away since it is vegan.
