One of my favorite things to make when I’m on a time crunch is tuna salad. It can be made a day or two ahead of time and refrigerated until it’s needed. It’s extremely filling because of its high protein levels, and prep time is minimal since all you really need to do is crack open a can of tuna and chop up a few veggies. There are so many ways you can eat this salad: in a sandwich, on top of some massaged kale, by itself, or with crackers! This recipe calls for crackers, and my favorite gluten free option is the Simple Mills Almond Flour Crackers.
As I mentioned before, this recipe comes together quickly with minimal ingredients. All you’ll need is your favorite tuna, a few condiments like mayo and dijon mustard, and whichever vegetables you prefer. Personally, I can’t have tuna salad without adding lots of cherry tomatoes, pickles, and fresh dill. I highly suggest using fresh herbs when making this dish because they will make a HUGE difference in the final product.
This dish is naturally gluten and dairy free, but you can always switch out the GF crackers for your favorite regular ones. I’ve tried numerous gluten-free crackers over the years, and so far the best tasting ones have been by Simple Mills. They are almond flour based, so if you have a nut allergy I recommend switching them out for these rice and sesame-based Back to Nature Multi-Seed Rice Thins. Ingredients
Tune Salad Ingredients
- 1 can Tuna
- 1/4 Purple Onion
- 3 Pickles
- 2 Tomatoes or 1 cup cherry tomatoes
- 1/4 cup Chopped Dill
Dressing Ingredients
- 1 tbsp Mayonnaise
- 1 tbsp Coarse Dijon Mustard sub creamy dijon mustard
- 1/2 Medium Lemon
- 1 tsp Garlic Powder sub minced garlic
- Salt & Pepper
- 1/2 tbsp Hot Sauce optional
Instructions
- Drain canned tuna and place it into a bowl.
- Finely chop the purple onion, pickles, tomatoes, and dill. Add chopped vegetables to the bowl of tuna and mix.
- Add all dressing ingredients to a separate bowl and whisk together well. Once combined, add dressing to tuna salad.
- Mix tuna salad really well, adjust seasonings as needed, and serve with your favorite crackers.
