In my humble opinion, the best salads always start with a base of massaged kale. Kale has a way of soaking up all the best flavors in a bowl and making the rest of the ingredients come together harmoniously. This specific salad recipe is my go-to for when I need to bring a dish to a potluck or a dinner party. It’s a crowd pleaser, and it doesn’t take long to put together.
If you don’t have much time to cook, I’m a huge fan of pre-shredded kale and carrots. They make life 100 times easier. My favorite variety of kale is Curly Kale, but this salad will turn out well with practically any greens.
Personally, I love a loaded salad. The more ingredients and textures, the better! If you prefer simplicity, feel free to omit any vegetables that you don’t like. Alternatively, feel free to add in more! Use this recipe as an opportunity to really go crazy. You only live once, after all.
Loaded Massaged Kale Salad

- 8-10 cups Chopped or shredded kale
- 3 cups Cherry tomatoes
- 1 Red or orange bell pepper
- 1/2 Red onion
- 2 cups Shredded carrots
- 1/2 cup Hemp seeds
- 1 cup Dried cranberries
- 1 cup Chopped walnuts
- 1 cup Crumbled feta cheese (optional)
- 1 cup Fresh chopped parsley (optional)
Dressing Ingredients
- 1/3 cup Olive oil
- 1/2 cup Red wine vinegar
- 1 Large lemon
- 3 cloves Minced garlic
- Salt
- Black pepper
Instructions
- Put your chopped kale in a bowl and drizzle with olive oil and juice from a lemon. Massage the oil and juice in for about 1-2 mins or until it looks like it has completely seeped into the kale.
- Chop the cherry tomatoes into halves or quarters, dice the bell pepper and purple onion, and add everything into the bowl.
- Sprinkle in the cranberries, walnuts, hemp seeds, shredded carrots, feta cheese, fresh parsley. Mix well.
- Whisk together the dressing ingredients well and drizzle over the salad. Mix well and enjoy!
