I’ve been meaning to make savory oats for months now, and I’m so glad I finally did! I’m definitely a sweet oatmeal kinda gal, but this savory rendition did not disappoint. I probably wouldn’t make this a daily breakfast, but it’s super fun if you’re looking to change up your breakfast routine.
When I first heard about savory oatmeal I was immediately put off; in my mind, oats are supposed to be sweet. I ended up giving them a shot anyways and I was pleasantly surprised.
The miso paste brings a delightful, salty umami flavor to the oats which complements the rich finishing oil added towards the end. My favorite part of the whole dish is the crispy fried egg. The crispiness adds a great texture to the mushy oats. I wish I had better word to use for oats, but mushy is the most accurate, and it’s not necessarily a bad thing.
I didn’t have regular oatmeal, so I used oat bran, but you can substitute the bran for regular oats if you have them. Just make sure to use the ratio of oats to water that’s recommended on the package.
Savory Morning Oat Bran
Equipment
- 1 Small pot
- 1 Spatula
- Cutting Board
- Chef's knife
Ingredients
Oat Bran Base
- 1/2 cup Oat bran (sub 1 cup regular oatmeal)
- 1.5 cups Water (sub 2 cups water if using oatmeal)
- Salt
- 2-3 tsp Red miso paste
- 1/4 cup Hot water (to dissolve miso paste)
Oat Bowl Toppings
- 2 Fried or poached eggs
- Chili oil
- 1 stalk Green onions (scallions) (finely chopped)
- 1-2 tsp Sesame seeds
- Olive oil or toasted sesame oil (finishing drizzle)
- Salt & pepper (to taste)
Instructions
- Over medium heat, combine oat bran with 1.5 cups of water and a pinch of salt in a small pot. Stir often.
- Once it starts bubbling and thickening keep stirring and cook for 2 mins before taking it off of the heat. If it gets too thick, add water little by little until desired consistency.
- While the oat bran is cooking, combine 2-3 tsp of miso paste with 1/4 cup of hot water and whisk together until miso dissolves. Mix it into the oat bran once it finishes cooking.
- Plate in two of your favorite bowls and top with desired toppings! Drizzle with olive or toasted sesame oil to finish it off.
