Yes these cookies are made using only 3 ingredients. Yes they are made in an air-fryer. Yes there are full of protein. They are even VEGAN. I know, I know, it all sounds good to be true, but just trust me.
These cookies are held together by the sheer power of three mashed bananas and oats, and the protein comes from a vegan protein powder. I’m super picky when it comes to protein powders because I can’t stand the aftertaste of artificial sweeteners. The protein powder I used is called Ataq Plant Based Protein Powder. I find that it has a slight artificial aftertaste, but is isn’t nearly as strong as other protein powders I’ve tried in the past. I found mine at Grocery Outlet, but you can also find it on Amazon (I am not affiliated with the brand in any way).
This recipe is a great snack option to make ahead of time and have on hand during the week. The cookies require very little effort and can be stored in the fridge for up to 7 days. They also serve as a great post-workout pick-me-up. The flaky salt and chocolate chips are optional additions, and they’ll definitely make the final result much more photogenic. - Air Fryer
- Foil
- Mixng bowl
- Mixing spoon
Ingredients
- 3 Large, ripe bananas
- 2 cups Quick oats (sub rolled oats if needed)
- 2 scoops Chocolate protein powder (I used Ataq Fuel vegan protein powder)
- Chocolate chips (optional)
- Flaky salt (optional topping)
Instructions
- In a large bowl, mash the bananas.
- Add in quick oats and protein powder and mix well until everything is fully combined. Fold in chocolate chips if you desire.
- Roll into 10-12 small balls and lightly flatten them into a cookie shape.
- Place the cookies in a single layer on your air fryer tray and cook at 360° F or 182° C for 8 mins.
- Top with flaky salt if you'd like and enjoy!
