No-bake birthday cake energy balls made with only seven clean ingredients! What could be better? The answer is nothing.
I love making these energy balls before the start of a busy week and storing them in my fridge to grab when I need a quick snack or sweet pick-me-up. The main ingredient is dates which give this recipe a natural and fulfilling sweetness. The nuttiness of the peanut butter and fresh walnuts brings everything together and adds more delicious layers of flavor and depth.
These energy balls are made using fresh nuts and dates, making them naturally gluten and dairy free and perfect for anyone who’s vegan! That’s a triple whammy, if you ask me.
There are a variety of dates available for purchase, but I always cook using Medjool dates. They are the most widely available, and they have a great size and texture. Trader Joe’s and Whole Foods usually have great quality Medjool dates in stock, but if you are far from either of these stores I’ve included links to some of my favorites from Amazon.

Vegan & GF Birthday Cake Energy Balls

- Food Processor
Ingredients
- 8-10 Medjool dates
- 1/2 cup Peanut butter
- 1 cup Oatmeal or oat flour
- 2 tsp Vanilla extract
- 1/4 tsp Sea salt
- 1/2 cup Almond milk or other milk of choice
- 1 cup Walnuts can sub almonds
- Birthday cake sprinkles
Instructions
- Place dates in a bowl and submerge in hot water. Soak for 3-5 minutes.
- Put all of the ingredients except for the sprinkles into a food processor and mix until everything is combined into a doughy consistency.
- Turn the food processor off and take out the blade to fold in the sprinkles. Measure with your heart!
- Roll the dough into about 10-12 balls and top with more sprinkles.
- Refrigerate for 15-20 mins and enjoy!
